Regional.

We produce in Mainz-Finthen and keep transport distances short. The organic mushrooms are cultivated in our historic vaulted cellar, which provides ideal conditions and a stable climate with low energy consumption.

Certified organic.

Our business is organic-certified according to DE-ÖKO-006. We use exclusively substrates from controlled organic cultivation [organic-certified supplier in accordance with EU Regulation (EU) 2018/848].

Königspilze is a small but distinguished organic gourmet mushroom farm.

In Mainz-Finthen, at Königsborn, we cultivate organic gourmet king oyster mushrooms in the historic vaulted cellar of the former Königsborn Brewery. The king oyster mushroom (Pleurotus eryngii), known in German as the "Königspilz," is valued for its firm texture, rich flavor, and exceptional culinary versatility.
The location has a remarkable history. More than 2,000 years ago, the spring at Königsborn supplied the city of Mainz with fresh water via an aqueduct. It is a truly special place where purity and favorable conditions have played an important role since ancient times.
Today, the stable conditions within the historic vaulted cellar provide an ideal environment for calm and carefully controlled cultivation—without chemical additives and with a clear focus on regional production, sustainability, freshness, and organic quality.

The Idea
At a stage of life when many people are already thinking about retirement, Martina Jansky decided to embark on a new venture: establishing an organic gourmet mushroom farm as a part-time agricultural business.
She is supported in this endeavor by her family, who actively contribute to the day-to-day operations of the farm.
What drives us is a simple idea: to produce fresh organic gourmet mushrooms locally, sustainably, and with respect for natural resources—transparent and traceable in every step, certified organic, and crafted with a genuine passion for the product.
